A unique and prolific grower, sunchokes are a gardener’s delight. Our tubers are more red in color, and tend to grow long and slender without many knobs to peel around. This may be due to our climate/soil type. Our sunchokes rarely flower and if/when they do it is at the very end of the growing season – just a few days before the first frost. Hardy to at least zone 4a.
Our sunchokes grow on the “edges” between our forests and prairies. We mow a firebreak between these two ecosystems and that also keeps the sunchokes in their place. Prepare in advance on how you will contain them, because they will spread.
